Beef Casserole Recipe From The Butchers Block

Recipe Ingredients

450g of Butchers Block Beef Mince
1tsp Olive Oil
2tsp Paprika
1 finely chopped onion
1 finely chopped yellow pepper
150g of sliced mushrooms
ttbsp tomato puree
250g of long grain rice
1tbsp of fresh chopped parsley
1 pint of beef stock
75g of grated cheddar cheese
Salt and Pepper to taste


Heat the oil in a casserole dish over a medium heat. Cook the beef mince until lightly browned. Add the paprika, mushrooms, onion, pepper and tomato puree. Cook for 5 minutes before adding in the rice and cooking for a further 3-4minutes whilst gently stirring. Add the beef stock and parsley, cover the dish and leave to simmer for approximately 20minutes by which time the rice should have absorbed most of the liquid. Top the grated cheese and re-cover, leaving to stand until the cheese has melted.
